Microgreens 101: The Types
There are 3 categories of shoots, and some varieties can be found in more than one. 🌱

Germinations : Varieties to germinate in a Mason jar for a few days are Fennel, Mung Bean, Alfalfa, Eastern Ancient Mix, Sandwich Mix, Chickpeas, and some others like Kale, Kohlrabi, watercress, mustards, radishes and clover.

Microgreens : Virtually all varieties are excellent for ~1-3 week microgreens, except pot sprouts, such as alfalfa, mung bean, chickpea, and mixes. Organic cultivation in soil/compost is recommended.

Young shoots : Several varieties are also popular in “babies”, that is to say, let them grow for several weeks, and even 1 to 2 months. The most popular include Chard, Kale, Spinach, Lettuce, Mustards, Radish, Arugula etc… Organic growing in soil/compost is also recommended.
