Parsnips are root vegetables that are perfectly suited to Quebec’s climate. Easy to grow and maintain, they can be harvested late in the season, even after the first frosts 
Parsnip seeds can be sown directly in the soil 1 cm deep in early spring, as soon as the soil can be worked, generally in April or May.
Sow the seeds directly in the soil about 1 cm deep and 7–10 cm apart. Rows should be about 30 cm apart.
Water regularly to keep the soil moist, especially during dry periods. Avoid overwatering, however, as this can cause root rot.
If your soil is rich, additional fertilizer may not be necessary. If it is poor, however, a balanced organic fertilizer can be beneficial.
Keep the site free of weeds and thin the seedlings to about 10 cm apart once the plants are large enough to handle.
Parsnips can be harvested in fall after the first frosts, generally in October or November. Cold weather improves their flavour by converting starch into sugar!
