Bell peppers are not only delicious but also rich in nutrients, and with a little care and preparation they can thrive in Quebec’s climate 
Because peppers need a long growing season, start the seeds indoors about 8–10 weeks before the expected last frost. In Quebec, this generally means starting them in late February or early March.
Once the risk of frost has passed and the seedlings have at least two true leaves, you can transplant them outdoors. Choose a sunny location with well-drained soil rich in organic matter.
Space pepper plants about 45 cm apart to allow good air circulation and optimal growth.
Peppers need evenly moist soil. Water regularly, but avoid overwatering to help prevent fungal diseases.
Once the plants begin to flower, apply a potassium-rich organic fertilizer to encourage fruit development.
Watch for diseases and pests. Aphids, Colorado potato beetles, and nematodes can cause problems. Use organic control methods to manage these pests.
Peppers can be harvested as soon as they reach the desired size. For sweeter peppers, wait until they reach their final colour, whether red, yellow, orange, or purple.
