An even more colourful variant of the radish microgreen — midway between the bright pink of the China Rose radish and the rich purple of red cabbage: deep magenta-violet stems, luminous, contrasting spectacularly with the tiny heart-shaped cotyledons in a tender, almost emerald green. This intense pigmentation comes from a high concentration of anthocyanins, the same red-purple pigments responsible for the colour of red cabbage, Bull's Blood beet, and every purple plant.

The brighter the light during growing (ideally near a sunny window or under intense horticultural LEDs), the more the colour intensifies. Classic radish flavour as a sprout: immediate mustardy bite, juicy crunch, fresh vegetal finish — the signature of the isothiocyanates released by the Brassica family.

Use: the colour makes it THE signature microgreen for photographic presentations and dishes built for effect — on a creamy risotto, the visual effect of a tuft of purple shoots on a white-yellow background is striking. Also excellent in sandwiches (where it adds both bite and colour), on tacos, on Asian bowls (contrasting against white rice), on pizza just before serving, or as a colourful addition to a composed salad.

Health double-up: isothiocyanates (chemoprevention) and anthocyanins (antioxidants) in the same little shoot.

  • Soaking: not required (small seeds); optional 4-6 hours.
  • Germination time: 2-3 days.
  • Sprout harvest: 4-6 days after soaking begins.
  • Microgreen harvest: 8-12 days after sowing.
  • Yield: about 1 tsp of seeds produces a 20 × 20 cm tray of microgreens.
  • Best uses: photographic presentations, dishes built for effect, colourful sandwiches.
