Probably the most beautiful microgreen in the world — miniature cotyledon leaves of a brilliant magenta pink, like fluorescent confetti on the plate.

Very mild, lightly earthy flavour, recalling a young beet leaf (amaranth's botanical cousin). Tender, melting texture.

Use par excellence: final garnish on tartare, carpaccio, ceviche, savoury panna cotta, or any dish where you're after a spectacular colour contrast with minimal gustatory investment. To pinch or cut with scissors at the moment of serving.

• Soak: not required (tiny seeds).
• Germination time: 2 to 4 days.
• Microgreen harvest: 10 to 14 days after sowing.
• Yield: about 1 teaspoon of seeds produces a 20 × 20 cm tray of microgreens.
• Best use: plate decoration, finishing touches, high-gastronomy dishes.
