Purple kohlrabi produces elegant little microgreen shoots with pinkish-mauve stems and tender-green cotyledons — a more subtle visual variation than the Red Cabbage already described in our pages, the purple here being paler, more delicate, almost pink.
A very mild, fresh flavour, pleasantly sweet, with the characteristic note of mature kohlrabi — a unique blend between apple and broccoli stem, with none of the pungent or bitter edge. Juicy, crunchy texture. Excellent as a versatile garnish: fresh salads, cold sandwiches, Vietnamese summer rolls, fish tartare, or simply as a decorative crown around a tartare or carpaccio where the pink colour makes a remarkable effect.
Like all Brassica sprouts, rich in sulforaphane.
- Soaking: not required (small seeds); optional 4-6 hours.
- Germination time: 2-3 days.
- Sprout harvest: 4-6 days after soaking begins.
- Microgreen harvest: 8-12 days after sowing.
- Yield: about 1 tsp of seeds produces a 20 × 20 cm tray of microgreens.
- Best uses: salads, elegant garnishes, summer rolls.
