A cousin of carrot and celery — same Apiaceae family, same filiform plumed silhouette, same relatively long cycle. But an entirely different flavour: intense anise, almost licorice, mild and fresh in the mouth, extending the full aromatic profile of mature fennel (already described in our pages in its Florence bulb version). Fine green stems topped by narrow cotyledons, then soon the lacy frond characteristic of adult fennel — visually extremely elegant. Airy, tender texture.

Gastronomic use: a garnish on pan-seared fish or salt-crusted fish, on ceviche, on salmon carpaccio, on orange or grapefruit sorbet (fennel and citrus marry beautifully), on seafood risotto, on a raw-fennel-and-orange salad (mother-and-child visual echo amplifying the theme), or as a finish on a fennel pollen pasta.

Practical note: like all Apiaceae (carrot, celery), fennel is NOT recommended for jar germination — seeds too slow, mould risk — reserve for tray cultivation on potting mix.

  • Soaking: optional 4-6 hours (speeds germination).
  • Germination time: 7-14 days.
  • Microgreen harvest: 14-21 days after sowing.
  • Yield: about 2 tsp of seeds produces a 20 × 20 cm tray of microgreens.
  • Best uses: fish, ceviche, citrus sorbets, refined dishes.
