A small gastronomic curiosity, borage as a microgreen offers an astonishingly direct and faithful fresh-cucumber flavour, without needing to grow the cucumber itself. As a microgreen, the effect is concentrated and particularly refreshing: 5 to 10 cm shoots with lightly pinkish, downy stems (the small white hairs characteristic of borage are already visible at the microgreen stage), topped with elongated oval cotyledons of tender green. Juicy texture, lightly fuzzy but not unpleasant in the mouth — recalling a miniature gherkin.

Niche gastronomic use, perfect for chefs and cocktails: garnish on cold cucumber-and-yogurt soup, on ceviche, on gravlax, on raw oysters, as aromatic garnish in a Pimm's Cup or a gin & tonic (the English have traditionally added borage to it for this same cucumber note since the 18th century), or simply laid on a slice of fresh tomato with summer salt.

Borage as a microgreen is one of those rare microgreens that can genuinely replace another fresh ingredient in a recipe rather than acting as a mere garnish.

  • Soak: optional 4 to 8 hours (speeds up germination).
  • Germination time: 7 to 14 days (slow).
  • Microgreen harvest: 14 to 21 days after sowing.
  • Yield: roughly 1 tablespoon of seeds produces a 20 × 20 cm tray of microgreens.
  • Best use: replacement for cucumber in cocktails and cold dishes, gastronomic garnishes.
