The scientific name \u003cem\u003eLinum usitatissimum\u003c\/em\u003e is eloquent — \u003cem\u003eusitatissimum\u003c\/em\u003e means in Latin \"the most useful, the most used,\" which sums up everything this plant has given humanity.\u003c\/p\u003e\n\u003cp\u003eFrom flax, we draw three great products: \u003cem\u003efibre\u003c\/em\u003e (which gives linen cloth, already used to dress pharaohs and which wrapped Egyptian mummies), \u003cem\u003elinseed oil\u003c\/em\u003e (eaten or used to treat wood and to make traditional oil paint), and \u003cem\u003eflaxseed\u003c\/em\u003e (rich in omega-3s, now a modern superfood).\u003c\/p\u003e\n\u003cp\u003eAs a microgreen: elegant little shoots 5 to 8 cm, with fine upright stems topped by narrow lance-shaped cotyledons of tender green — a slender, minimalist silhouette, distinct from all the other microgreens already described. Subtle, refined flavour, mild, lightly nutty, with a mineral note and an almost herbaceous finish.
